Ingredients

  • ¼ cup olive oil

  • 2 teaspoon lemon zest

  • 1 teaspoon salt

  • ¼ teaspoon black pepper

  • 14 - 16 ounce beef flank steak, trimmed to an even thickness

  • 12 ounce tiny red new potatoes, quartered

  • 1 cup quartered, cored, and sliced fennel

Directions

  1. Preheat air fryer at 375°F. In a large bowl combine oil, lemon zest, salt, and pepper. Remove half of the oil mixture and rub over meat. Add potatoes and fennel to remaining oil mixture; toss to coat.

  2. Spread potato mixture in air-fryer basket. Top with meat. Cook 18 to 20 minutes or until meat registers 135°F to 145°F and potatoes are tender, turning meat and rearranging potato mixture once. Transfer meat to a plate; cover and let stand 5 minutes. Thinly slice meat across the grain and serve with potato mixture.
